Crust-less Quiche

For this breakfast, I just make it up as I go! I try to meal prep and make a lot at a time so I have breakfast for the entire week.

Usually 4-6 eggs,

1/4-1/2 cup of milk,

1/4-1/2 cup of onions ( grilled is best but raw chopped is good too)

1 cup of steamed broccoli or spinach or any veggie you like. Most people would use mushrooms, but I do not care for them so I do not use them

You could also had 1/2-1 cup of chopped bacon or ham or whatever meat you prefer.

1/2 cup of your favorite shredded cheese.

Mix it all up, pour into greased muffin tins or use cup cake liners. Bake at 350 degrees for about 10 minutes. It will yield between 10-12 “quiches” depending on how much batter you put in each muffin space.

They will keep in the refrigerator for 4 days. I heat up two, add some fruit and maybe a slice of toast and I’m off! Well… these days, off is just to my desk in the next room, but normally I can take breafast with me, and eat it when I get to work, or on the way if I cannot wait! Enjoy!
