Beet “Poke” Bowl with Edamame, Snap peas and Carrots and Sesame Mayo. Yum!

This is a new recipe to me and I love it! It takes a long time to prep so either make it a fun weekend meal or do some pre prepping during the week. If you clean and dice the beats you can save them in the refrigerator for a few days until you are ready to cook. You can also make the sauce in advance as well.

Why beets? Beets reduce inflammation which is linked to heart disease (which we already have a congenital heart issue. Who needs another?) Beets are also a good source of nitrates which is good for your blood vessels! They are low in calories and taste great!

This bowl also provides protein by using edamame. I always try to buy organic edamame. That is just my personal preference. I am not an RD or food scientist and I have read mixed reviews on soy in general so I opt for organic and only have soy once to twice/ week at most.

This dish (I think) goes great with a light white wine like a Pino grigio. A sparkling water is a good choice too!
